We've been working our socks off for the past month on a fantastic world of biscuit at Leeds Castle, in Kent. This Christmas, the 900 year-old castle is recreated in two enormous hand-iced gingerbread structures: a two metre long doll's house interpretation of the castle and a two and a half metre long model of the whole castle and grounds, plus all twelve Christmas trees in the castle are decorated with gingerbread baubles, bespoke to each room.

The entire Gingerbread Christmas theme at Leeds Castle took Biscuiteers over 550 hours to make, using more than 30kg of butter and sugar, 240 eggs and 216kg of icing. The castle model
The Exhibition Centre in the Stable Courtyard features a 2.5m long hand‑iced gingerbread biscuit replica model of the entire castle and grounds in full Winter Wonderland glory with a host of miniature characters to bring the Castle to life and a warm glow coming through the windows from the built-in lights.

The gingerbread dolls house
On display in the Seminar Room, is a two metre long doll's house interpretation of Leeds Castle, which takes you from Tudor period rooms right through to the 1930s with details of each room meticulously refashioned in biscuit, icing and fondant paste.

Can you even spot the difference between the real room and the biscuit version, we had to take a second look!
