ingredients

  • - 450g gluten-free rolled oats
  • - 150g sunflower seeds
  • - 100g pumpkin seeds
  • - 50g sesame seeds
  • - 50g poppy seeds
  • - 70g sultanas
  • - 70g dried cranberries
  • - 100g dried apricots
  • - 230g butter
  • - 230g honey
  • - 212g light brown sugar
  • - 1/2 tsp of ground cinnamon

Method
1. Soak the dried fruit in boiling water for 10 minutes.

2. Cook the nuts in the oven set to 160°C for 12 minutes until lightly browned. (Turn the oven down to 150°C).

3. Place the butter, honey, sugar, cinnamon and salt in a pan. Slowly bring to the boil and simmer for 5 minutes until everything is completely emulsified.

4. Drain the fruit and add to the hot honey mixture.

5. Remove the seeds from the oven and add to the honey mixture. Then add the oats. Stir everything until well combined and generously coated with the honey.

6. Pour the mixture into an oiled grease-proof square tin and pat down with a spatula.

7. Bake in the oven set to 150°C for 40 minutes, until golden brown.
