It’s that time of year again, the prosecco has long been popped and poured and the fireworks displays are done and dusted, now cue the question ‘What’s your New Year's resolution?’

Rather than setting (and potentially breaking) the usual new year goals this January, why not opt for a resolution that will fill you with joy all year long and learn to ice like a Biscuiteer.

It’s never been easier for a budding baker to learn the tricks of the trade, particularly when the master icers and bakers at the Ministry of Biscuits have created a whole host of helpful YouTube videos to help you get started.

  1. How to Fill and Prepare a Piping Bag
    Learning how to fill an icing bag is one of the most important things to learn as a beginner – if the piping bag isn’t filled correctly, it can cause air bubbles to form which can affect the quality of icing. That’s why in this first tutorial we’re showing you how to correctly fill and prepare a piping bag.

2. Cookie Icing Tips and Tricks from the Experts
In this tutorial, we’re showing off some of the key foundational tools that’ll help you create beautifully hand-iced biscuits. Find out why you should always keep your cookie dough chilled, how you can use the oven to help you ice cookies perfectly, some secret cookie icing hacks and expert icing techniques, and how to cut cookies without a cookie cutter!

3. Icing Consistencies for Cookie Decorating
Now you’ve learnt how to perfectly prepare your biscuits and icing equipment, in this third video we’re demonstrating the different types of icing we use here at the Ministry of Biscuits. We work with two different types of royal icing consistency, including flood icing and line icing, and we will explain the roles they play in icing cookies.

4. How to ice details delicately
Now for the details, at the Ministry of Biscuits, we tend to use line icing to add the finer details to our biscuits. In this biscuit icing tutorial, we’ll be taking you through some of our exclusive tips on using line icing for biscuits, and showing you how to add small details and texture to your biscuit designs to help bring them to life.

5. How to Decorate a Cupcake
Whilst we’re best known as the original hand-iced biscuit company, our patisserie team also creates beautifully handmade cupcakes for our Icing Boutiques in London. In this video we’re sharing three different ways to perfectly decorate a cupcake - starting with a basic buttercream swirl, followed by a technique using an open star nozzle, and finally a 3D floral cupcake piping technique.
