Cath Kidston inspired Mother's Day biscuits - Biscuiteers

Eeeek! It's nearly Mother's Day! Still panicking with what to get Mum? Well not to worry, as we've created these biscuits inspired by the lovely floral prints from our friends over at Cath Kidston. Follow the steps below so you can have a go at making these for delicious biscuits for Mum at home.
For these biscuits you’ll need:
- Batch of 24 vanilla biscuits
- Flood icing in: light pink, white, light green, dark green & yellow
- Line icing in: light pink, teal, white and light green
- Piping bags
- Scissors
- Flower shaped biscuit cutter
- Baking parchment paper


Bake a batch of our vanilla biscuits, the recipe for which can be found in our book ‘The Biscuiteers book of iced Biscuits’ or on our blog. Flower shaped cutters can be found online or you can draw your own shape on some baking paper to use as a stencil to cut around.

Time to prep your icing! In the Biscuiteers icing hall we use two different types of icing: ‘line’ and ‘flood’. Line icing should be the texture of toothpaste whilst flood has a runnier consistency. Put all your icing colours into piping bags and cut the top of the bag with a vertical line.

Once your biscuits have completely cooled, you can start icing! Using your light pink line icing, ice around the edge of the flower biscuit. This line will act as a wall to stop your flood icing from flowing out. Let the line icing dry for 15 minutes at room temperature. Fill your biscuits with light pink flood icing, being careful not to overfill.

Icing directly onto the pink flood, ice a smaller flower with leaves in the centre of the biscuit using white flood icing.

Using light green, dark green and yellow flood icing, add definition to the flower and leaves. This will help to create the appearance of shadow and add the central detail. We’ve been inspired by Cath Kidson’s Elvington Rose print which we had close to hand whilst icing! Carefully place your iced biscuits onto a baking tray and put them back into the oven set at the lowest temperature (usually around 50°C) and bake for approximately 40 minutes or until the flood icing has set hard. Once your biscuits are completely cool you can now add the finishing touches. Using white and green line icing, ice leaves and vines around the edge of the biscuit.
