Another summer of sports is fast approaching and this year we're serving an ace here at The Ministry of Biscuits. Biscuiteers are supplying their patisserie to Compass Group UK, official caterers of The Championships, Wimbledon 2023!

From July our very own Biscuiteers patisserie will be available at Rosewater, Number 1 Suites, Renshaw, Courtside, Wingfield, Champions Room and Membership at The Championships, Wimbledon 2023.
How we made the menu
Our Patisserie Development Manager, Luciana, is the expert when it comes to crafting perfectly indulgent afternoon tea menus and this occasion is no different.

Luciana and the patisserie team first started working on this spectacular summer project all the way back in December. The initial idea was to create a selection of traditional tea time treats inspired by fresh British flavours that could be locally sourced.

Developing the menu starts with Luciana noting down and mood boarding a variety of different flavours and ingredients, taking inspiration from her travels and research. The process then moves into the kitchen, which is where the fun starts (the taste testing!).
For this project, fresh British flavours were at the forefront, so initial ideas of mango, lemon and lime were exchanged in favour of quintessentially British berries and high quality home grown herbs. Anything that isn’t quite right for this project is noted down for future menus.

The goal is always to create a menu with complementary components our customers and clients will love, which is how we whittled the menu down to five showstopping sweet treats…
What is on the menu
Strawberry & Basil Macaron
For an occasion like Wimbledon, we of course had to create something inspired by the star of the show…the tennis ball! And what better canvas than a Biscuiteers macaron.

Our vibrant strawberry and basil macaron is handmade at the Ministry of Biscuits using a traditional french recipe but the flavour is reminiscent of British summertime with the perfect mix of a sweet strawberry and crisp basil.
Blueberry Tart
At the heart of our Blueberry tart is a velvety blueberry compote and a fluffy vanilla mousseline cream. The finishing flourishes include fresh blueberries, paired with delicate dried flowers.
Jivara Chocolate & Salted Caramel Mousse
Inspired by a mango mousse cake Luciana came across just before development started, our chocolate and salted caramel mousse is the most intricate item on the menu.

Complete with Jivara Chocolate and sea salt and chocolate sable, our Pattiersie team makes 600 mouse cakes a day in the run up to the occasion.

Once filled with salted caramel & mascarpone cream, the mouse needs to be piped into moulds and frozen before we can assemble the dessert. Once set, the rich chocolate glaze needs to be precisely 32 degrees when poured over the mouse in order to achieve the glistening finish, too hot and the mouse will lose its shape, too hot and you’d lose the shine!
Strawberry & Cream Cake
A summertime staple, our Strawberry and Mascarpone Cream Cake is inspired by the much loved strawberry and cream pairing many viewers enjoy when watching the Wimbledon tournament.
Raspberry & Vanilla Choux
Our Raspberry and Vanilla Choux was one of the final pieces of the puzzle. Designed to compliment our Strawberry & Cream Cake, this dessert is encased in a choux au craquelin to create a delightful crunch effect with every bite and is filled with fresh vanilla mascarpone chantilly.
The production process
With approximately 45,000 afternoon tea treats to be made in time for the event, it’s all hands on deck at the Ministry of Biscuits.

In the run up to the deadline the whole team has been providing a helping hand. Alongside our core Patisserie team, our National Pastry School students have been on hand, as well as our bakery team and icing experts who have used their artistic flair to help assemble and delicately decorate.
