ingredients
- For the cupcakes:
- 50g unsalted butter (melted)
- 125g caster sugar
- 25ml vegetable oil
- 13g cornflour
- 9ml vanilla extract
- 50g double cream
- 150g plain flour
- 9g baking powder
- 2 eggs
- 40ml milk
- For the lemon buttercream and decoration:
- 125g butter
- 250g icing sugar
- lemon zest from one large lemon

Method:
To make the lemon buttercream, mix together the butter and the icing sugar until light and fluffy, then add the zest of one lemon.
