Halloween is only a week away, and we're celebrating with a surprise-filled recipe ideal for recreating at home with the kids this weekend. Follow our step by step guide to see how we created these spooky Halloween biscuits, filled with unexpected treats and perfect for any party this Halloween. 1) Make a batch of our chocolate biscuit dough and roll out to a thickness of 6mm.
2) Choose a spooky biscuit cutter like a pumpkin, tombstone or skull and get cutting, not forgetting to cut out the middle on a third of the three layers, then place your biscuits on a pre-lined baking tray. You should have two full biscuit shapes and one 'frame' to make your piñata biscuit.
3) Bake in the oven at 170 C for 15-25 minutes, depending on size.
4) Remove the trays from the oven and transfer the whole sheet of parchment to a cooling rack. Leave to totally cool down before starting to ice. ![]()
5) You're now ready to decorate the biscuits with flood and line icing. We used black, grey, green, white, and orange to colour the royal icing.
6) Use your line icing (it should be smooth and thick, a bit like the texture of toothpaste) to ice around the circles edges to create a ‘wall’ for the runny icing.
7) Once the edges are dry (after around 10 minutes in room temperature) use a runny royal icing to flood the biscuit.
8) Put all your finished iced biscuits back in the oven for 30 mins (set to the lowest temperature it can go). Don’t worry, the biscuits will not cook any further or burn, the low heat simply sets the runny icing to give that professional, glossy look.
9) You can now decorate the biscuits with line icing: creepy skeleton hands, tombstone markers and spooky pumpkins went down a treat at Biscuiteers HQ!
10) Layer the 'cut out' biscuit on top of another whole biscuit, using line icing as 'glue'. If you have asymmetrical biscuit shapes, make sure all the bits will match when they are sandwiched. ![]()

11) Now fill the resulting gap with treats and sandwich the leftover iced biscuit shapes on top. We've gone for mini chocolate beans, but you could use sprinkles, mini candy corn or Reece's pieces.
